Simple Plum Cake Display

This easy plum cake is a delightful treat perfect for any occasion. It’s moist, flavorful, and showcases the natural sweetness of ripe plums.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 4-5 ripe plums, pitted and sliced
  • 1 tablespoon granulated sugar, for topping
  • 1/2 teaspoon ground cinnamon, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream or yogurt, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan. Arrange the plum slices on top of the batter in a decorative pattern.
  6. In a small bowl, combine the 1 tablespoon of sugar and the cinnamon. Sprinkle evenly over the plums.
  7. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

Serve warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
