Easy Macaroni Salad

This classic macaroni salad is incredibly easy to make and perfect for potlucks, picnics, or a quick side dish. Creamy, tangy, and packed with flavor, it’s sure to be a crowd-pleaser.

Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 2 tablespoons white vinegar
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped green bell pepper
  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. Cook macaroni according to package directions. Drain well and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, yellow mustard, white vinegar, granulated sugar, salt, and black pepper.
  3. Add the cooked macaroni, celery, red onion, green bell pepper, and hard-boiled eggs (if using) to the bowl.
  4. Stir until well combined.
  5. Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.
  6. Serve chilled.

Notes

For an extra creamy salad, add a tablespoon or two of milk. You can also customize the vegetables to your liking, such as adding carrots or pickles.
