Tortellini Soup

A comforting Italian-inspired tortellini soup filled with cheesy tortellini, fresh spinach, and a savory broth perfect for a cozy meal any day.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14-ounce) can diced tomatoes
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 ounces refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 4 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Pour in chicken broth and diced tomatoes with their juice. Stir in Italian seasoning, salt, and black pepper.
  4. Bring the soup to a boil, then reduce heat to low and simmer for 10 minutes.
  5. Add tortellini to the pot and cook according to package instructions, usually 3-5 minutes, until tender.
  6. Stir in chopped spinach and cook for 1-2 minutes until wilted.
  7. Remove from heat and ladle soup into bowls. Garnish with grated Parmesan cheese before serving.

Notes

For extra flavor, garnish with fresh basil or a squeeze of lemon juice. You can also substitute spinach with kale or add cooked Italian sausage for a heartier soup.
