Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey
  • 2 teaspoons black pepper, freshly ground
  • 1 teaspoon cornstarch
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a bowl, combine the chicken, 1 tablespoon soy sauce, 1 tablespoon cornstarch, and sesame oil. Marinate for at least 15 minutes.
  2. In a small bowl, whisk together the chicken broth, 2 tablespoons soy sauce, oyster sauce, honey, black pepper, and 1 teaspoon cornstarch. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the bell peppers and onion to the skillet and cook until slightly softened, about 3-5 minutes. Add the garlic and ginger and cook for 1 minute more, until fragrant.
  5. Pour the sauce into the skillet and bring to a simmer, stirring constantly until the sauce thickens slightly, about 1-2 minutes.
  6. Return the chicken to the skillet and toss to coat in the sauce.
  7. Serve immediately over cooked rice. Garnish with sesame seeds, if desired.

Notes

For an extra kick, add a pinch of red pepper flakes to the sauce. Serve with a side of steamed broccoli for a complete meal.
