Peppermint Patties

Delight in these homemade peppermint patties, featuring a smooth, creamy mint filling coated in rich dark chocolate for a refreshing and satisfying treat.

  • 2 cups powdered sugar
  • 1 1/2 tablespoons unsalted butter, softened
  • 1 tablespoon light corn syrup
  • 1 teaspoon peppermint extract
  • 3 tablespoons heavy cream
  • 6 ounces dark chocolate, chopped
  • 1 teaspoon vegetable oil

Instructions

  1. In a medium bowl, combine powdered sugar, softened butter, corn syrup, peppermint extract, and heavy cream; mix until smooth and dough-like.
  2. Turn the mixture onto a surface dusted with powdered sugar and knead gently until uniform.
  3. Roll the dough out to about 1/4 inch thickness and cut into small circles or squares using a cookie cutter.
  4. Place the shapes on a wax paper-lined tray and refrigerate for at least 30 minutes to firm up.
  5. In a microwave-safe bowl, heat the chopped dark chocolate with vegetable oil in 20-second intervals, stirring until melted and smooth.
  6. Using a fork, dip each chilled peppermint patty into the melted chocolate, allowing excess to drip off.
  7. Place coated patties back onto wax paper and refrigerate until the chocolate is set, about 15 minutes.
  8. Store peppermint patties in an airtight container in the refrigerator.

Notes

For a festive touch, sprinkle crushed candy canes on top of the chocolate coating before it sets.
