This Curried Sweet Potato and Apple Soup is a comforting and flavorful blend of sweet and savory. The creamy sweet potato is perfectly balanced by the tart apple and warm curry spices.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth
  • 2 medium sweet potatoes, peeled and cubed
  • 2 apples, peeled, cored, and chopped
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Optional toppings: cilantro, yogurt, toasted pumpkin seeds

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger and cook for 1 minute more, until fragrant.
  3. Stir in curry powder, turmeric, and cayenne pepper (if using) and cook for 30 seconds.
  4. Pour in vegetable broth, sweet potatoes, and apples. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
  5. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  6. Return the soup to the pot and stir in coconut milk. Season with salt and pepper to taste.
  7. Heat through and serve.
  8. Garnish with cilantro, yogurt, or toasted pumpkin seeds, if desired.

Notes

For a richer flavor, roast the sweet potatoes and apples before adding them to the soup. You can also use apple cider instead of apple for a more intense apple flavor.
