This Croissant Breakfast Casserole combines flaky croissants, savory eggs, cheese, and breakfast sausage for a hearty and easy morning meal perfect for family gatherings or brunch.

  • 4 large croissants, cut into cubes
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked breakfast sausage, crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread the croissant cubes evenly in the prepared baking dish.
  3. Sprinkle the cooked sausage and shredded cheddar cheese evenly over the croissants.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and Dijon mustard if using.
  5. Pour the egg mixture evenly over the croissants, sausage, and cheese.
  6. Gently press down the casserole to soak the croissants well.
  7. Cover the dish with foil and refrigerate for at least 1 hour or overnight for best results.
  8. Bake uncovered for 40-45 minutes until the casserole is set and golden on top.
  9. Garnish with chopped green onions before serving, if desired.

Notes

For a vegetarian version, substitute sausage with sautéed mushrooms and spinach. Serve with fresh fruit or a light salad to balance the richness.
