Comforting Crockpot Lasagna Soup

Enjoy all the comforting flavors of lasagna in a hearty, easy-to-make soup. This Crockpot Lasagna Soup is perfect for a cozy weeknight dinner.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Transfer the ground beef to a slow cooker. Add the chopped onion and minced garlic.
  3. Pour in the crushed tomatoes, tomato sauce, and beef broth. Stir in the oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. During the last 30 minutes of cooking time, stir in the broken lasagna noodles.
  6. Once the noodles are tender, ladle the soup into bowls.
  7. Top each bowl with a dollop of ricotta cheese, a sprinkle of Parmesan cheese, and some fresh parsley.
  8. Serve immediately.

Notes

For an extra cheesy flavor, stir in a cup of shredded mozzarella cheese at the end of the cooking time.
