Easy and Delicious Crockpot Chicken Tacos

These Crockpot Chicken Tacos are incredibly easy to make and packed with flavor. Simply toss chicken and your favorite taco seasonings into the slow cooker for a delicious and customizable meal the whole family will love!

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup chicken broth
  • 1 (10 oz) can diced tomatoes and green chilies, undrained (like Rotel)
  • 1/2 cup salsa
  • Taco shells or tortillas, for serving
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, cilantro

Instructions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour in chicken broth, diced tomatoes and green chilies, and salsa.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and easily shreds with a fork.
  5. Remove chicken from the slow cooker and shred it with two forks.
  6. Return the shredded chicken to the slow cooker and stir to coat with the sauce.
  7. Serve the chicken in taco shells or tortillas with your favorite toppings.

Notes

For a spicier kick, add a pinch of cayenne pepper or use a hotter salsa.
