  • 8 slices of brioche bread
  • 1 cup fresh strawberries, sliced
  • 1/2 cup cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • Cooking spray or additional butter for frying

Instructions

  1. In a bowl, mix the softened cream cheese with powdered sugar and vanilla extract until smooth.
  2. Fold in the sliced strawberries gently into the cream cheese mixture.
  3. In another bowl, combine crushed graham crackers and granulated sugar.
  4. Spread an even layer of the strawberry cheesecake mixture onto 4 slices of brioche bread.
  5. Top each with a second slice of bread to form sandwiches.
  6. Brush the outsides of each sandwich with melted butter, then press gently into the graham cracker mixture to coat.
  7. Heat a skillet over medium heat and spray or brush with butter.
  8. Cook each sandwich for 3–4 minutes per side, or until golden brown and crispy.
  9. Remove from skillet and let cool slightly before serving.

Notes

For extra flavor, drizzle with honey or a balsamic glaze before serving, or serve with a scoop of vanilla ice cream for an indulgent treat.
