Ingredients

Scale
  • 1 lb salmon fillet, skin removed and cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tsp sriracha (adjust to taste)
  • 1 tsp honey
  • 2 tbsp vegetable oil, for frying
  • 1 tbsp chopped green onions, for garnish

Instructions

  1. In a shallow bowl, mix flour, salt, and black pepper.
  2. Dip each salmon bite into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Fry the salmon bites in batches until golden brown and cooked through, about 3 minutes per side. Drain on paper towels.
  5. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make the bang bang sauce.
  6. Toss the fried salmon bites gently with the bang bang sauce until well coated.
  7. Garnish with chopped green onions and serve immediately.

Notes

For extra crunch, double coat the salmon bites by repeating the egg and panko steps before frying. Serve with a side of fresh greens or steamed rice for a complete meal.
