Creamy Roast Garlic and Lemon Pasta Sauce

This creamy roast garlic and lemon pasta sauce blends the rich, mellow flavor of roasted garlic with fresh lemon zest for a bright, smooth finish, perfect for elevating any pasta dish.

  • 1 whole garlic bulb
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • Salt and freshly ground black pepper, to taste
  • 8 oz pasta (such as fettuccine or spaghetti)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb to expose cloves, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35-40 minutes until soft.
  2. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water.
  3. Once garlic is cool, squeeze the roasted cloves into a blender or bowl.
  4. In a skillet over medium heat, heat remaining 1 tablespoon olive oil. Add roasted garlic, heavy cream, lemon zest, and lemon juice. Stir and bring to a gentle simmer.
  5. Mix in Parmesan cheese and stir until melted and smooth. Season with salt and pepper.
  6. Toss cooked pasta in the sauce, adding reserved pasta water as needed to reach desired consistency.
  7. Garnish with fresh parsley if desired and serve immediately.

Notes

For extra depth, add a pinch of red pepper flakes for heat or swap heavy cream for coconut cream to keep it dairy-free.
