Elevate your breakfast or brunch with this creamy mushroom toast. Earthy mushrooms are sautéed to perfection and nestled on toasted bread for a comforting and flavorful meal.

Ingredients

  • 1 tablespoon olive oil
  • 8 ounces mixed mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • 4 slices sourdough bread, toasted
  • Optional: 2 tablespoons grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until softened and browned, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more, until fragrant.
  3. If using, pour in white wine and let it simmer for 1-2 minutes, allowing the alcohol to evaporate.
  4. Stir in heavy cream and bring to a simmer. Season with salt and pepper.
  5. Reduce heat to low and cook until the sauce has thickened slightly, about 3-5 minutes.
  6. Stir in parsley.
  7. Spoon the creamy mushroom mixture over the toasted bread slices.
  8. Optional: Sprinkle with Parmesan cheese before serving.

Notes

For an extra layer of flavor, add a fried egg on top of the mushroom toast.
