Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 8 ounces pasta (such as penne, fettuccine, or rotini)
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish
  • Salt and pepper to taste

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Cook pasta according to package directions. Drain and set aside.
  4. In the same skillet, melt butter over medium heat. Add onion and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more.
  5. Pour in chicken broth and bring to a simmer. Reduce heat and simmer for 5 minutes, or until slightly reduced.
  6. Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  7. Add cooked pasta and chicken to the sauce. Toss to coat.
  8. Garnish with fresh parsley and serve immediately.

Notes

For an extra kick, add a pinch of cayenne pepper to the sauce. Serve with a side of garlic bread for a complete meal.
