  • 1 pound ground turkey
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg, lightly beaten
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cranberry sauce
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, chopped cranberries, breadcrumbs, onion, egg, parsley, garlic powder, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into 1-inch meatballs.
  4. Place the meatballs on the prepared baking sheet.
  5. In a small bowl, whisk together cranberry sauce and Dijon mustard.
  6. Brush the meatballs with the cranberry sauce mixture.
  7. Bake for 20-25 minutes, or until the meatballs are cooked through and the internal temperature reaches 165°F (74°C).
  8. Serve warm, drizzled with any remaining cranberry sauce mixture.

Notes

Serve these meatballs as an appetizer with toothpicks, or over rice or mashed potatoes for a complete meal. For extra flavor, add a pinch of red pepper flakes to the meatball mixture.
