  • 8 ounces crushed pineapple, well drained
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pecans, chopped
  • 1/4 cup green onions, finely chopped
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Crackers, for serving

Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Add the drained crushed pineapple, chopped cranberries, chopped pecans, green onions, garlic powder, salt, and pepper to the cream cheese. Mix well to combine.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.
  4. Remove the cheese mixture from the refrigerator.
  5. Shape the cheese mixture into a ball.
  6. Place the remaining chopped pecans on a plate or in a shallow dish.
  7. Roll the cheese ball in the pecans, coating it evenly.
  8. Wrap the cheese ball in plastic wrap and refrigerate for at least 30 minutes to allow the pecans to adhere.
  9. Serve the cheese ball with crackers.

Notes

For an extra touch, drizzle the cheese ball with honey before serving. You can also substitute walnuts or almonds for the pecans.
