This Cranberry Pecan Cheesecake is a delightful dessert, perfect for the holidays or any special occasion. It features a creamy cheesecake filling with a festive cranberry swirl and a crunchy pecan crust.

  • For the Crust:
  • 1 1/2 cups pecan halves
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1/4 teaspoon salt
  • For the Filling:
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Cranberry Swirl:
  • 1 cup fresh cranberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a food processor, pulse pecans until finely ground. Add sugar, melted butter, and salt; pulse until combined.
  2. Press the pecan mixture firmly into the bottom of a 9-inch springform pan. Bake for 10-12 minutes, or until lightly golden. Let cool completely.
  3. Make the Cranberry Swirl: In a saucepan, combine cranberries, sugar, water, and lemon juice. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until cranberries have burst and the mixture has thickened slightly. Let cool completely.
  4. Make the Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in sour cream, then eggs one at a time, and vanilla extract.
  5. Pour half of the cheesecake filling into the prepared crust. Dollop spoonfuls of cranberry sauce over the filling. Gently swirl the cranberry sauce into the filling using a knife or skewer. Pour the remaining cheesecake filling over the cranberry swirl.
  6. Bake for 55-65 minutes, or until the edges are set but the center still jiggles slightly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  7. Remove from oven and refrigerate for at least 4 hours, or preferably overnight, before serving.
  8. Run a thin knife around the edge of the pan before releasing the springform ring. Serve chilled.
