  • 1 tablespoon orange zest

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • 1 1/2 cups fresh or frozen cranberries
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and orange zest.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract and orange juice.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently until combined.
  7. Fold in the cranberries.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. For the glaze, whisk together powdered sugar and orange juice until smooth.
  12. Drizzle the glaze over the cooled bread and let set before slicing and serving.

Notes

For extra flavor, try adding chopped walnuts or substituting some cranberries with dried cherries. Serve sliced with butter or cream cheese.
