  • 8 oz bowtie pasta
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh broccoli florets
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook bowtie pasta according to package instructions until al dente. Drain and set aside.
  2. Steam broccoli florets until tender-crisp, about 4-5 minutes. Set aside.
  3. In a small bowl, mix smoked paprika, chili powder, cumin, cayenne, salt, and pepper to create the cowboy butter seasoning.
  4. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden and cooked through, about 6-8 minutes.
  5. Reduce heat to medium, add butter and garlic to the skillet. Stir until butter melts and garlic is fragrant, about 1 minute.
  6. Sprinkle the cowboy butter seasoning over the chicken and stir to coat evenly.
  7. Add lemon zest and lemon juice to the skillet, stirring to combine.
  8. Toss in the cooked bowtie pasta and steamed broccoli, mixing gently to combine all ingredients and heat through.
  9. Remove from heat, sprinkle chopped parsley and Parmesan cheese if using, and serve immediately.

Notes

For extra flavor, marinate the chicken in lemon juice and cowboy butter seasoning for 30 minutes before cooking. Serve with a side of crusty bread or a fresh green salad.
