Light and Fluffy Cottage Cheese Pancakes

These light and fluffy cottage cheese pancakes are a protein-packed breakfast that’s surprisingly easy to make. They’re a delicious and healthy alternative to traditional pancakes.

  • 1 cup cottage cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon melted butter, plus more for greasing
  • Optional: Vanilla extract

Instructions

  1. In a blender or food processor, combine cottage cheese, flour, eggs, sugar, baking powder, and salt. Blend until smooth. Add vanilla extract if desired.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve immediately with your favorite toppings.

Notes

Serve with fresh fruit, maple syrup, or a dollop of yogurt for a complete breakfast.
