This cottage cheese flatbread pizza is a quick and healthy meal, featuring a crisp flatbread base topped with creamy cottage cheese and fresh vegetables for a delicious twist on traditional pizza.

Ingredients

  • 1 whole grain flatbread (8-10 inch)
  • 1/2 cup cottage cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup sliced bell peppers
  • 2 tbsp sliced black olives
  • 1 tsp olive oil
  • 1/2 tsp dried oregano
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the flatbread on a baking sheet lined with parchment paper.
  3. Spread the cottage cheese evenly over the flatbread.
  4. Sprinkle shredded mozzarella cheese on top of the cottage cheese layer.
  5. Distribute cherry tomatoes, bell peppers, and black olives evenly over the cheese.
  6. Drizzle olive oil and sprinkle dried oregano, salt, and pepper over the toppings.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the edges of the flatbread are crispy.
  8. Remove from oven and garnish with fresh basil leaves before serving.

Notes

For extra flavor, add a sprinkle of red pepper flakes or a drizzle of balsamic glaze before serving.
