Cottage Cheese Egg Bites

Cottage Cheese Egg Bites are fluffy, protein-packed mini frittatas perfect for a quick breakfast or snack, combining creamy cottage cheese with eggs and savory seasonings.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped spinach
  • 1 tablespoon chopped chives
  • Salt and pepper, to taste
  • Non-stick cooking spray

Instructions

  1. Preheat the oven to 325°F (163°C) and lightly spray a muffin tin with non-stick cooking spray.
  2. In a medium bowl, whisk the eggs until smooth.
  3. Stir in the cottage cheese, shredded cheddar, spinach, chives, salt, and pepper until well combined.
  4. Pour the mixture evenly into the muffin tin cups, filling about 3/4 full.
  5. Bake for 18–20 minutes, or until the egg bites are set and lightly golden on top.
  6. Allow to cool for a few minutes before removing from the tin.
  7. Serve warm or store in the refrigerator for up to 3 days.

Notes

For extra flavor, add cooked bacon bits or swap spinach with finely diced bell peppers. These egg bites also freeze well for easy meal prep.
