Cottage Cheese Cloud Bread

Light, fluffy, and protein-packed, Cottage Cheese Cloud Bread is a low-carb, gluten-free alternative perfect for sandwiches or snacks.

  • 4 large eggs, separated
  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, blend the cottage cheese, egg yolks, salt, garlic powder, and Parmesan cheese until smooth.
  4. Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate the whites.
  5. Using a spoon, drop six even mounds onto the prepared baking sheet.
  6. Bake for 25-30 minutes or until golden and set.
  7. Allow to cool before removing them from the baking sheet.
  8. Serve as a bread substitute for sandwiches or toast.

Notes

For extra flavor, try adding chopped herbs like chives or parsley to the batter before baking.
