Cottage Cheese and Herb Biscuits

Fluffy, savory biscuits made with creamy cottage cheese and fresh herbs, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup low-fat cottage cheese
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup buttermilk (plus more if needed)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry blender or fingers until mixture resembles coarse crumbs.
  4. Stir in the cottage cheese, chives, and parsley.
  5. Add buttermilk and gently mix until dough comes together; add a little more buttermilk if too dry.
  6. Turn the dough onto a floured surface and knead briefly about 5 times.
  7. Pat dough into a 1-inch thick rectangle and cut into rounds using a biscuit cutter.
  8. Place biscuits on prepared baking sheet and bake for 12-15 minutes until golden brown.
  9. Remove from oven and let cool slightly before serving.

Notes

For an extra savory touch, brush biscuits with melted garlic butter right after baking.
