This Cornbread Casserole is a comforting and easy-to-make side dish perfect for any occasion. With its creamy texture and delicious cornbread flavor, it’s sure to be a crowd-pleaser.

  • 1 box (15 ounces) corn muffin mix
  • 1 can (14.75 ounces) cream-style corn
  • 1 can (14.75 ounces) whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs, lightly beaten
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the corn muffin mix, cream-style corn, drained whole kernel corn, sour cream, melted butter, and eggs. Stir until just combined; do not overmix.
  3. Stir in chopped green onions, if using.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool slightly before serving.

Notes

Serve warm as a side dish with chili, BBQ, or any main course. For a richer flavor, use brown butter instead of melted butter.
