Creamy Copycat Panera Potato Soup

  • 6 slices bacon, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 1/2 lbs Yukon gold potatoes, peeled and cubed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives, for garnish
  • Shredded cheddar cheese, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving bacon grease in the pot.
  2. Add onion to the pot and cook in bacon grease until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
  3. Pour in chicken broth, add potatoes, salt, pepper, and garlic powder. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth and creamy.
  5. Return the soup to the pot. Stir in heavy cream and sour cream. Heat through, but do not boil.
  6. Ladle soup into bowls. Top with cooked bacon, chives, and shredded cheddar cheese (optional). Serve hot.

Notes

For a thicker soup, blend a portion of the soup before adding the cream and sour cream. Serve with a crusty bread for dipping.
