  • 1 box red velvet cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 8 oz semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine red velvet cake mix, eggs, vegetable oil, buttermilk, and vanilla extract. Mix until smooth.
  3. Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  4. Cut the cooled cake into 2×2 inch squares.
  5. In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form to create the creamy filling.
  6. Slice each cake square horizontally and spread whipped cream filling on the bottom layer. Top with the other half to form a sandwich.
  7. In a microwave-safe bowl, melt chocolate chips and butter in 30-second intervals, stirring until smooth.
  8. Dip each cake sandwich into the melted chocolate, coating fully. Place on a wire rack to set.
  9. Allow the chocolate coating to harden before serving. Store in the refrigerator.

Notes

For extra decoration, sprinkle mini heart-shaped candies on the chocolate coating before it sets. Serve chilled for the best taste and texture.
