cinnamon swirl banana bread

Moist and flavorful cinnamon swirl banana bread made with ripe bananas and a warm cinnamon sugar ribbon, perfect for breakfast or a delightful snack.

  • 3 ripe bananas, mashed
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix mashed bananas, granulated sugar, melted butter, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk flour, baking soda, and salt together.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. In a small bowl, mix ground cinnamon and brown sugar for the swirl.
  6. Pour half of the batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  7. Pour the remaining batter on top, then sprinkle with the remaining cinnamon sugar mixture. Use a knife to gently swirl the cinnamon sugar into the batter.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For added texture, sprinkle chopped walnuts or pecans into the batter before baking.
