Delicious Cinnamon Roll Protein Crepes

Enjoy a protein-packed twist on classic cinnamon rolls with these delicious crepes. These light and fluffy crepes deliver all the comforting flavors of a cinnamon roll in a healthier, satisfying way.

Ingredients

  • 1/2 cup protein pancake mix
  • 1 scoop vanilla protein powder
  • 1/2 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • Cooking spray
  • For the filling: 2 tablespoons cream cheese, softened; 1 tablespoon powdered sugar; 1/4 teaspoon cinnamon
  • Optional toppings: sugar-free syrup, chopped pecans

Instructions

  1. In a mixing bowl, whisk together the protein pancake mix, protein powder, milk, egg, cinnamon, and vanilla extract until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour 1/4 cup of batter onto the hot griddle for each crepe. Cook for 2-3 minutes per side, or until golden brown.
  4. While the crepes are cooking, prepare the filling. In a small bowl, combine the softened cream cheese, powdered sugar, and cinnamon. Mix well.
  5. Once the crepes are cooked, spread a thin layer of the cream cheese filling over each crepe.
  6. Roll up the crepes and serve immediately. Top with sugar-free syrup and chopped pecans, if desired.

Notes

For an extra touch, drizzle the rolled crepes with a sugar-free cream cheese frosting made with cream cheese, powdered sugar, and a splash of milk or water.
