  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup brown sugar
  • For icing: ½ cup powdered sugar, 1 tablespoon milk, ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. In a separate bowl, whisk together flour, cinnamon, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough out on a lightly floured surface into a rectangle about ¼ inch thick.
  7. Sprinkle the brown sugar evenly over the dough, then gently roll it up tightly from one long edge into a log.
  8. Slice the log into ½-inch thick rounds and place them on the prepared baking sheet.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. While the cookies cool, mix powdered sugar, milk, and vanilla extract until smooth to make the icing.
  11. Drizzle icing over cooled cookies and let set before serving.
