Christmas Pinwheel Cookies

Delight in these festive Christmas Pinwheel Cookies featuring buttery, tender dough swirled with festive red and green layers, perfect for holiday celebrations.

  • 2 ½ cups all-purpose flour
  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Red and green food coloring
  • Optional: powdered sugar for dusting

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add flour and salt, mixing until a soft dough forms.
  4. Divide the dough into three equal portions.
  5. Leave one portion plain, color one with red food coloring, and the other with green food coloring; knead each until color is evenly distributed.
  6. Roll each colored dough portion between two sheets of parchment paper into equal-sized rectangles.
  7. Layer the three dough sheets (white, red, and green) and gently press together.
  8. Starting from one edge, carefully roll the dough layers into a tight log or cylinder.
  9. Wrap the log in plastic wrap and chill in the refrigerator for at least 2 hours or until firm.
  10. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  11. Slice the chilled dough log into ¼-inch thick pinwheel cookies and place them onto prepared baking sheets.
  12. Bake for 10-12 minutes or until the edges are lightly golden.
  13. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  14. Optional: Dust with powdered sugar before serving.

Notes

For extra festive flair, sprinkle colored sugar or edible glitter on the dough before rolling it up.
