Chorizo Tacos

These chorizo tacos are bursting with flavor! Crispy chorizo is paired with your favorite toppings for a quick and delicious meal.

Ingredients

  • 1 pound Mexican chorizo, casing removed
  • 1 tablespoon olive oil
  • 1/2 white onion, diced
  • 1 jalapeno, seeded and minced (optional)
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 12 corn or flour tortillas
  • Your favorite taco toppings (shredded lettuce, diced tomatoes, sour cream, salsa, avocado, etc.)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Drain off any excess grease.
  2. Add diced onion and jalapeno (if using) to the skillet and cook until softened, about 3-5 minutes.
  3. Stir in cilantro and lime juice.
  4. Warm tortillas according to package directions.
  5. Fill each tortilla with chorizo mixture and your desired toppings.
  6. Serve immediately and enjoy!

Notes

For extra flavor, try adding a squeeze of lime juice and a sprinkle of cotija cheese on top of your tacos.
