  • 2 tbsp unsweetened cocoa powder

  • Pinch of salt
  • 3 tbsp milk
  • 2 tbsp vegetable oil
  • 1/4 tsp peppermint extract
  • 2 tbsp mini chocolate chips
  • Optional: crushed peppermint candy for topping

Instructions

  1. In a microwave-safe mug, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  2. Add milk, vegetable oil, and peppermint extract; stir until smooth.
  3. Fold in the mini chocolate chips.
  4. Microwave on high for 70-90 seconds or until the cake has risen and is set in the middle.
  5. Let cool for a minute, then optionally sprinkle crushed peppermint candy on top and enjoy warm.
