  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Chocolate Ganache:
  • 4 ounces semi-sweet chocolate, chopped
  • ½ cup heavy cream
  • Optional Garnish:
  • Chopped peanuts
  • Chocolate shavings

Instructions

  1. Make the Crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar. Press firmly into the bottom of a 9-inch pie plate.
  2. Prepare the Peanut Butter Filling: In a large bowl, beat cream cheese and peanut butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the peanut butter mixture.
  4. Pour the peanut butter filling into the prepared crust and spread evenly. Refrigerate for at least 4 hours, or preferably overnight, to set.
  5. Make the Chocolate Ganache: Place chopped chocolate in a heatproof bowl. Heat heavy cream in a saucepan until simmering. Pour hot cream over chocolate and let it sit for 1 minute. Whisk until smooth and glossy.
  6. Pour the chocolate ganache over the chilled peanut butter filling. Spread evenly.
  7. Chill and Serve: Refrigerate for at least 30 minutes to allow the ganache to set. Garnish with chopped peanuts and chocolate shavings, if desired. Slice and serve cold.
