  • Zest of 1 orange
  • 2 tablespoons orange juice

Instructions

  1. In a medium saucepan, combine the heavy cream, sugar, cocoa powder, orange zest, orange juice, and salt.
  2. Whisk well to ensure the cocoa powder is fully dissolved.
  3. Place the saucepan over medium heat and bring to a gentle simmer, stirring occasionally to prevent sticking.
  4. Reduce the heat to low and continue to simmer for 3-5 minutes, or until the mixture has slightly thickened. Be careful not to boil.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the posset mixture into small serving glasses or ramekins.
  7. Cover and refrigerate for at least 3 hours, or preferably overnight, to allow the posset to set completely.
