  • 1 1/2 cups chocolate wafer crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Filling:
  • 24 ounces cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange extract
  • Zest of 1 orange
  • 2 large eggs
  • 1/4 cup heavy cream
  • 4 ounces semi-sweet chocolate, melted and cooled
  • For the Garnish (optional):
  • Orange slices
  • Chocolate shavings

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine chocolate wafer crumbs, melted butter, and sugar. Press mixture into the bottom of a 9-inch springform pan.
  2. Bake crust for 8-10 minutes. Let cool completely.
  3. Make the Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add vanilla extract, orange extract, and orange zest. Mix well.
  5. Beat in eggs one at a time, then stir in heavy cream.
  6. Gradually add the melted chocolate, mixing until just combined. Do not overmix.
  7. Pour filling over cooled crust.
  8. Bake the Cheesecake: Bake for 55-65 minutes, or until the edges are set but the center still jiggles slightly.
  9. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  10. Remove from oven and let cool completely on a wire rack.
  11. Cover and refrigerate for at least 4 hours, or preferably overnight.
  12. Garnish and Serve: Run a thin knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan. Garnish with orange slices and chocolate shavings, if desired.
  13. Slice and serve.

Notes

For a richer chocolate flavor, use dark chocolate instead of semi-sweet. You can also add a tablespoon of orange liqueur to the filling for an extra burst of citrus.
