Chocolate Chip Sourdough Cruffins

Delight in flaky, buttery sourdough cruffins filled with rich chocolate chips, blending the tang of sourdough with sweet indulgence perfect for breakfast or dessert.

  • 1 cup sourdough starter (active and bubbly)
  • 3 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tsp salt
  • 1 cup whole milk (warm)
  • 2 ¼ tsp instant yeast
  • 12 tbsp unsalted butter (cold, cut into thin slices)
  • 1 cup semi-sweet chocolate chips
  • 1 egg (for egg wash)
  • Powdered sugar (optional, for dusting)

Instructions

  1. In a mixing bowl, combine sourdough starter, warm milk, sugar, and yeast. Let sit for 10 minutes until foamy.
  2. Add flour and salt to the bowl and mix until a dough forms. Knead for 8-10 minutes until smooth and elastic.
  3. Cover the dough and let it rise for 2 hours, or until doubled in size.
  4. Roll out the dough into a large rectangle on a floured surface.
  5. Layer thin slices of cold butter evenly over two-thirds of the dough.
  6. Fold the dough into thirds like a letter, then roll out again. Repeat butter layering and folding one more time to create layers.
  7. Roll the dough into a large rectangle, sprinkle chocolate chips evenly over the surface, and roll tightly into a log.
  8. Slice the log into 8 equal pieces and place each piece into a greased muffin tin, cut side up.
  9. Cover and proof for 1 hour until puffy.
  10. Preheat the oven to 375°F (190°C). Brush the tops with beaten egg for a golden finish.
  11. Bake for 20-25 minutes until golden brown and cooked through.
  12. Remove from oven, cool slightly, and dust with powdered sugar if desired before serving.

Notes

For extra richness, serve warm with a dollop of whipped cream or vanilla ice cream.
