  • 2 (14.5 ounce) cans pitted cherries, drained
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon almond extract
  • For the Cream Topping:
  • 1 1/2 cups heavy cream
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Make the Chocolate Crust: In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Press the mixture into the bottom and up the sides of a 9-inch pie plate.
  2. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes. Let cool completely.
  3. Make the Cherry Filling: In a saucepan, combine the drained cherries, granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
  4. Remove from heat and stir in the almond extract. Let cool slightly.
  5. Assemble the Pie: Pour the cherry filling into the cooled chocolate crust.
  6. Make the Cream Topping: In a large bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  7. Spread the whipped cream over the cherry filling.
