Chicken Stew

A comforting and hearty chicken stew packed with tender chicken, vegetables, and rich flavors, perfect for a warm family meal.

  • 1 lb chicken thighs, boneless and skinless, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. In the same pot, add onion and garlic; sauté until soft and fragrant.
  3. Add carrots and celery, cooking for 5 minutes until slightly tender.
  4. Return the chicken to the pot and add the diced potatoes, chicken broth, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer covered for 30-40 minutes until vegetables are soft and chicken is fully cooked.
  6. Stir in frozen peas and cook for an additional 5 minutes.
  7. If you prefer a thicker stew, mix flour with a little water to form a slurry and stir into the pot, cooking until the stew thickens.
  8. Season with salt and pepper to taste and garnish with fresh parsley before serving.

Notes

For extra depth, add a splash of white wine when sautéing the vegetables or serve with crusty bread to soak up the delicious broth.
