  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup cooked pasta (such as ditalini or small shells)
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup chopped fresh basil, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Season chicken with salt and pepper and add to the pot. Cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in crushed tomatoes, chicken broth, oregano, basil, and red pepper flakes (if using). Bring to a simmer and cook for 15 minutes.
  4. Add cooked pasta and cooked chicken to the pot. Heat through for 2-3 minutes.
  5. Stir in Parmesan cheese.
  6. Ladle soup into bowls and garnish with fresh basil and additional Parmesan cheese. Serve immediately.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables such as carrots, celery, or zucchini to the soup.
