A Delicious Chicken Parmesan Grilled Cheese Sandwich

This Chicken Parmesan Grilled Cheese combines the comforting flavors of chicken parmesan with the ease of a grilled cheese. It’s a satisfying and delicious twist on a classic sandwich.

Ingredients

  • 2 slices of bread (Italian or sourdough recommended)
  • 2 tablespoons butter, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cooked chicken, breaded and cut into bite-sized pieces
  • 1/4 cup marinara sauce
  • 1 tablespoon olive oil
  • Optional: Fresh basil leaves

Instructions

  1. In a small skillet, heat olive oil over medium heat. Add breaded chicken pieces and heat until warmed through, about 2-3 minutes. Remove from pan and set aside.
  2. Spread butter evenly on one side of each slice of bread.
  3. Place one slice of bread, butter-side down, in a clean skillet over medium-low heat.
  4. Spread marinara sauce evenly over the bread in the skillet.
  5. Sprinkle half of the mozzarella and Parmesan cheese over the sauce.
  6. Add the warmed chicken pieces on top of the cheese.
  7. Sprinkle the remaining mozzarella and Parmesan cheese over the chicken.
  8. Top with the second slice of bread, butter-side up.
  9. Grill the sandwich for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  10. Remove from skillet, let cool slightly, and slice in half.
  11. Garnish with fresh basil, if desired, and serve immediately.

Notes

For an extra crispy grilled cheese, spread a thin layer of mayonnaise on the outside of the bread instead of butter.
