  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice chicken breasts horizontally to create 2 thin cutlets each; season with salt and pepper.
  3. Set up three shallow dishes: one with flour, one with beaten egg, and one with a mixture of breadcrumbs and Parmesan cheese.
  4. Dredge each chicken cutlet first in flour, then egg, then breadcrumb mixture, pressing to adhere.
  5. Heat olive oil in a skillet over medium heat and cook chicken until golden brown on both sides, about 3-4 minutes per side.
  6. Place chicken cutlets in a baking dish, spoon marinara sauce over each, and sprinkle mozzarella cheese on top.
  7. Bake in preheated oven for 15-20 minutes, or until cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley before serving.

Notes

Serve with spaghetti or a side salad for a complete meal. For extra flavor, add a pinch of Italian herbs to the breadcrumb mixture.
