Homemade Chicken Noodle Soup Bowl

Warm up with a comforting bowl of homemade Chicken Noodle Soup. This classic recipe is packed with tender chicken, hearty noodles, and flavorful vegetables in a rich broth.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 8 ounces egg noodles
  • 1/4 cup chopped fresh parsley
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth. Add chicken breasts, thyme, rosemary, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  3. Remove chicken from the pot and shred with two forks. Return shredded chicken to the pot.
  4. Add egg noodles and cook according to package directions, usually about 8-10 minutes, or until noodles are tender.
  5. Stir in parsley and season with salt to taste.
  6. Serve hot.

Notes

For an extra layer of flavor, add a squeeze of lemon juice to each bowl before serving.
