Delicious Homemade Chicken Fried Rice

This classic Chicken Fried Rice is a quick and easy one-pan meal, perfect for using leftover rice and chicken. Loaded with vegetables and savory flavors, it’s a satisfying dish the whole family will love.

Ingredients

  • 2 cups cooked rice, chilled
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste
  • Optional: Green onions, chopped, for garnish

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chopped onion and garlic and cook until softened, about 2 minutes.
  3. Push the onion and garlic to one side of the skillet and pour in the beaten eggs. Scramble until cooked, then break into small pieces.
  4. Add the diced chicken and mixed vegetables to the skillet. Cook for another 2-3 minutes, stirring occasionally.
  5. Add the chilled rice to the skillet and break it up with a spatula. Stir to combine all the ingredients.
  6. Pour in the soy sauce and sesame oil. Stir-fry for 3-5 minutes, or until the rice is heated through and slightly crispy.
  7. Season with salt, pepper, and ground ginger to taste.
  8. Garnish with chopped green onions (optional) and serve immediately.

Notes

For a richer flavor, use day-old rice. You can also add a splash of oyster sauce or hoisin sauce for extra depth of flavor.
