Chicken Fajita Rice

A flavorful and easy one-pan meal combining tender chicken, colorful fajita vegetables, and seasoned rice for a delicious Mexican-inspired dinner.

  • 1 lb (450g) boneless, skinless chicken breasts, sliced
  • 1 cup long grain white rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime, juiced
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken and cook until browned and cooked through, about 5-6 minutes. Remove chicken and set aside.
  3. In the same skillet, add onion, bell peppers, and garlic. Sauté until vegetables are softened, about 4-5 minutes.
  4. Add rice, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to coat the rice and vegetables evenly with spices.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
  7. Return the cooked chicken to the skillet, stir to combine, and heat through for 2-3 minutes.
  8. Remove from heat and stir in lime juice.
  9. Garnish with fresh cilantro if desired and serve warm.

Notes

For extra flavor, add a sprinkle of shredded cheese on top before serving or a dollop of sour cream on the side.
