This Chicken Cordon Bleu Soup brings all the classic flavors of the dish into a comforting and easy-to-make soup. It’s creamy, cheesy, and packed with chicken and ham.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup cooked ham, diced
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup Swiss cheese, shredded
  • 1/4 cup Dijon mustard
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and bring to a simmer.
  3. Stir in shredded chicken, diced ham, heavy cream, and cream cheese. Cook until cream cheese is melted and smooth, about 5 minutes.
  4. Add Swiss cheese and Dijon mustard. Stir until cheese is melted and soup is heated through.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley, if desired.
  7. Serve hot.

Notes

For a thicker soup, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the soup during the last few minutes of cooking. Serve with crusty bread for dipping.
