Chicken Carbonara

Chicken Carbonara is a creamy and comforting Italian-inspired pasta dish featuring tender chicken, crispy pancetta, and a rich egg-based sauce.

  • 8 oz spaghetti or fettuccine pasta
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 oz pancetta or bacon, diced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain pasta.
  2. In a large skillet, heat olive oil over medium heat. Add pancetta or bacon and cook until crispy. Remove and set aside.
  3. In the same skillet, add the chicken pieces. Season with salt and pepper and cook until golden and cooked through, about 5-7 minutes. Add garlic during last minute of cooking.
  4. In a bowl, whisk together eggs and Parmesan cheese.
  5. Return pancetta to the skillet with chicken, then add the drained pasta. Remove skillet from heat to avoid scrambling eggs.
  6. Slowly pour egg and cheese mixture over pasta, tossing quickly and continuously to create a creamy sauce. Add reserved pasta water a little at a time as needed to loosen the sauce.
  7. Season with additional salt and pepper to taste and garnish with chopped parsley if desired. Serve immediately.

Notes

For extra richness, stir in a splash of cream or top with freshly cracked black pepper and extra Parmesan cheese before serving.
