This Chicken and Zucchini Bake is a delicious and healthy weeknight meal. Tender chicken and zucchini are baked to perfection in a creamy, flavorful sauce.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 medium zucchini, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on all sides.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in zucchini, heavy cream, Parmesan cheese, oregano, salt, and pepper.
  5. Transfer the mixture to a baking dish.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the zucchini is tender.
  7. Let cool slightly before serving.
