  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth, bring to a boil. Add chicken, thyme, rosemary, and pepper. Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  3. While the chicken is simmering, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt. In a separate bowl, combine milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Drop spoonfuls of dough into the simmering soup. Cover and cook for 15-20 minutes, or until dumplings are cooked through and fluffy.
  5. Garnish with fresh parsley and serve hot.

Notes

For extra flavor, add a bay leaf to the soup while it simmers. Remove before serving. You can also use pre-cooked rotisserie chicken to save time.
