This Chicken Alfredo Soup is a creamy, comforting twist on a classic Italian dish. Tender chicken, pasta, and a rich Alfredo sauce combine to create a satisfying and flavorful soup that’s perfect for a cozy night in.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 1/2 cup cooked pasta (such as rotini or penne)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken, Italian seasoning, salt, and pepper. Cook until chicken is browned and cooked through. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in heavy cream, Parmesan cheese, and cream cheese. Whisk until smooth and the cheeses are melted.
  5. Add the cooked chicken and pasta to the soup. Heat through.
  6. Garnish with fresh parsley and serve.

Notes

For a thicker soup, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the soup while it’s simmering. You can also add vegetables like spinach or broccoli for extra nutrients.
